Simple Coconut Cake


Yesterday was Easter. As I was growing up, my Granny always had a family get together on Easter and she would always make a yummy, delicious coconut cake that she would decorate to look like a bunny. Sadly, my Granny doesn't have those family get togethers anymore, but my sister was coming over with my nephew and we planned on playing games and having fun. I was craving that coconut cake so bad yesterday that I decided to make my own version and it turned out so good! Scroll down for the written recipe and instructions.




Simple Coconut Cake

20-30 minutes

Bake Time

30-40 minutes

Ingredients

The Cake


  • 1 cup of white sugar
  • 1/2 cup of butter, softened 
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1 1/2 cups of all purpose flour
  • 1 3/4 teaspoon of baking powder
  • 1/2 cup of milk

The Topping

  • 16 oz cool whip
  • 14 oz of sweetened coconut flakes
  • Optional: cheeries


Directions

Preheat oven to 350 degrees F (175 degrees C)

Grease and flour an 8 x 8 inch round cake pan or add liners to a muffin pan.

Combine the flour and baking powder in a medium bowl.

In a separate large bowl, with an electric mixer, cream together the softened butter and sugar. Scrape the sides with a spatula halfway through. Beat in the eggs 1 at a time. Stir in the vanilla with a spatula or spoon.

Add the flour and baking powder mixture 1 cup at a time to the butter and sugar mixture. Mix well with the electric mixer. Stir in the milk with a spatula or a spoon until the mixture is smooth.

Pour or scoop the cake mixture into the baking pan or muffin pan.

Bake for 30-40 minutes until golden brown. Bake cupcakes for 20-30 minutes. Cake is done when an inserted toothpick comes out clean.

Let the cake or cupcakes cool completely. If you want a 2 layer cake, cut the cake in half so that you have 2 circles of cake.

With a spatula, frost the cake with the cool whip.

Cover the cake completely with the coconut flakes by pressing handfuls of the coconut flakes onto the cake.

Optional: Add cherries.

Cut, serve and enjoy!

Refrigerate leftovers, if you have any!
